Coconut Macaroooooooons!

So, as you can see, this is not going to be a daily blog. As much as I hope it would be, cooking can take up a lot of time.

ANYWAYS, so it's my Dad's birthday today and I thought, "Hey, I should make him something." So as I flipped through the cookbook, the coconut macaroons catch my eye. It's simple, quick, and a dessert.

Luckily, I have all of the ingredients in my pantry. Oh wait, I didn't have nutmeg. So instead I used Cinnamon. So if any of you want to try and do this, it's really simple.

Ingredients:
2 Egg whites (this means you have to separate the yolk from the white part)
Half a cup of Brown Sugar
1 and a half cup of Unsweetened Coconut Shavings
About a splash of Vanilla Extract
A Teaspoon of Cinnamon (or any spice you like)

Pretty much, preheat your oven to 350*C. Combine all the ingredients, grease a baking tray, and then ball up the ingredients into pieces and place on the tray. Bake for about 15 mins, then once it's golden brown, let it cool for a bit. Once that's done, dig in!

This recipe is really easy and it's really good too. It's not too sweet and it taste amazing. Since I've tried it, I think it's time to up the game a bit. How does Mocha Coconut Macaroons sound? Yeah, amazing, I thought so too. So stay tuned, the next recipe will follow shortly. I bet your taste buds are watering right now. Yeah that's what I thought. Take it easy!

PS: I apologize for the poor quality of the picture. I used the camera on my phone. Next time I'll try and use a better camera.

  1. Wonderful idea, Nikko! I'm glad that you've referenced Julie & Julia and Chef Michael Smith. I would love to hear more about the process. Perhaps you could share some anecdotes - did the whole preparation and cooking process go as planned? Were you completely focussed or watching TV? What made you think of cinnamon when you didn't have nutmeg? Some of us might be noob chefs, too!
